Handcrafting William's Butter in Bolton
England

It's not everyday you get to watch a craftsman churning butter; however William Bromilow is not an everday man. I first came across him at a farmer's market, and was as taken by his character as his products: stunning handmade butters and freshly drawn buttermilk, being sold by a man in tweeds and with a good line in banter. It's all very deliberately local, small scale, and done at his pace.


Few producers still create dairy products like this by hand, but William takes cream from his brother's farm and turns it into liquid gold with a custom-made churn. Every pat is seasoned, shaped and packed by hand… and as you might expect, it's much in demand across the north west.

Oh, and he's also got a wicked sense of humour to boot. Cheers to William for being a good bloke and letting me make this panorama of him and his team in action: I happily put up with a rapid-fire exchange of dodgy jokes and enjoyed the whole experience.
